Gluten Free Cauliflower Cous Cous

This dish is high in vitamin C and manganese, and the antioxidants present in the cauliflower supports the body’s natural detoxification process.

Ingredients

1/2 head cauliflower, chopped
2 or 3 small carrots, peeled and sliced (about 3/4 cup)
1 clove garlic
1 tsp turmeric powder
1/4 tsp cayenne pepper
1/2 tsp black pepper
1/2 tsp sea salt
3 tbsp raisins
1/4 cup mint leaves, chopped
1/4 cup parsley, chopped 
1 1/2 tbsp light miso
1 1/2 tbsp tahini
3 tbsp lemon
drizzle of olive oil 
1/4 cup cherry tomatoes, halved
